AWARD WINNING CHILI

INGREDIENTS

  • 2 lbs. Chuck Roast
  • 2 lbs. Ground Beef
  • 2 lbs. Sweet Italian Sausage
  • 1 cup chicken broth
  • 2 Tbsp olive oil
  • 2 jalapeno peppers
  • 1/2 bag sweet peppers
  • 1 8 oz can chilis
  • 2 medium onions
  • 4 Tbsp minced garlic
  • 3 Tbsp chili powder
  • 2 tsp cumin
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp salt
  • 2 tsp black pepper
  • 2 10 oz cans tomato sauce
  • 1 8 oz can tomato paste
  • 2 15 oz cans diced tomatos
  • 2 15 oz cans kidney beans
  • 2 15 oz cans black beans
  • 1 can beer (your favorite)

INSTRUCTIONS

  1. Put chuck roast in the crockpot on high with 1 cup of chicken broth for 2 hours
  2. Chop jalapeno peppers, sweet peppers, chilis, onions and saute with olive oil and minced garlic
  3. Brown ground beef and sweet Italian sausage
  4. Take chuck roast out of crockpot and cut into small cubes
  5. Combine the meats and peppers with 1 cup of the juices from the chuck roast in a large stock pot
  6. Stir in the spices, tomato sauce, tomato paste, diced tomatoes, beans and beer
  7. Cook on low for 2.5 hours, stirring often
